Food Safety
Genoa Food Wholesalers are totally committed to ensuring the safety of our products. We are currently developing a HACCP plan which will meet the requirements of the new Victorian Food Safety Program legislation. We are also working towards obtaining the Woolworths Vendor Quality Management Standard accreditation. All our staff are being trained in accredited Food Hygiene Courses. This means we are taking all possible steps to guarantee the safety and quality of our product. What is a HACCP Plan? A HACCP plan is a written procedure designed to monitor and control hazards to the food and customers to ensure quality and safety. It: - identifies each step that is critical to maintaining the safety and quality of the food
- identifies a hazard
- sets the minimum standards that must be achieved
- determines how the step is checked or supervised
- describes what to do if something goes wrong
- tells staff where to record the necessary information
To write a HACCP Plan and be sure all areas of food safety have been addressed it is necessary to examine each step of every process related to food and all processes supplementary to food safety. It is a big job. Food Analysis As part of our HACCP Plan we regularly test our products for bacteria. We do this to ensure all products we sell will be safe to eat. We also work with our suppliers to set specifications for safety and quality and to check bacterial levels of all products we purchase and to check compliance with laws for pesticide residue levels. We must be satisfied with our product before we will supply our customers. The HACCP Plan controls receipt of raw materials, storage, cooking of nuts, packaging, cleaning, pest control, rubbish removal and so on. Summary The benefits of having a HACCP Plan are: - owners and customers can have confidence in the food being produced
- an effective HACCP Plan can help defend both Food Act and common law charges (and should please the insurer of the business)
- it should minimise customer complaints
- it should minimise the risk of transmitting food poisoning
